Stuðlaberg Gin

Coriander Gimlet

Ingredients

60 ml Stuðlaberg Gin
22.5 ml lime juice
22.5 ml coriander syrup
2 cucumber slices
1 dash orange bitters
A tiny pinch of salt
Coriander leaves and a dried citrus wheel

Method

Gently muddle the cucumber in a shaker, add the rest and shake well with ice. Strain into a chilled coupe and garnish.

Coriander syrup: Lightly toast 1 tbsp coriander seeds in a pan, add 200 g sugar, 240 ml water and the stalks from a bunch of fresh coriander and heat until the sugar dissolves. Cool and strain.
