Stuðlaberg Gin

Blackcurrant Gin Fizz

Ingredients

45 ml Stuðlaberg Gin
22.5 ml Riga Black Balsam Currant
45 ml unsweetened blackcurrant juice
15 ml lemon juice
15 ml simple syrup
22.5 ml pasteurised egg white
2 dashes Peychaud's bitters
30 ml soda water

Method

Shake everything except the soda first without ice and then with ice. Fine strain into a chilled tall glass, let the foam settle and gently pour the soda down through the centre.
