Stuðlaberg Gin

Rosemary Gin Fizz

Ingredients

60 ml Stuðlaberg Gin
30 ml lemon juice
15 ml rosemary syrup
20 ml pasteurised egg white
30 ml soda water
A sprig of rosemary

Method

Shake the gin, lemon juice, syrup and egg white without ice, then again with ice. Strain into a chilled glass, gently add the soda and garnish with rosemary.

Rosemary syrup: Heat 100 g sugar and 100 g water until the sugar dissolves. Take off the heat, add 2 small rosemary sprigs, leave for 15 minutes, strain and cool.
