Rökkvi Sörur

Ingredients

Bases: 200 g almonds
180 g icing sugar
3 egg whites
Cream: 250 g butter
300 g icing sugar
1 dl Rökkvi
4 tsp cocoa
2 tsp vanilla extract
70% chocolate for coating

Method

Heat the oven to 180°C. Grind the almonds finely and mix in the icing sugar. Whisk the egg whites stiff and gently fold in the almonds. Pipe small dots onto baking paper and bake for 8–12 minutes. For the cream: beat the butter and icing sugar until light, add the cocoa, then Rökkvi and vanilla. Spread plenty of cream on the cookies, chill until firm, then dip in melted chocolate and decorate with white chocolate.
