Stuðlaberg Gin

Duck Tails

Ingredients

• 50 ml Stuðlaberg Gin
• 25 ml orange juice
• 25 ml lemon juice
• 25 ml black tea syrup
• 15 ml cream
• 1 egg white
• 35 ml tonic

Method

Shake everything except the tonic with plenty of ice for about 15 seconds. Strain into another glass, discard the ice and shake again without ice for about 20 seconds. Pour the tonic into the serving glass and strain the drink on top – a dense foam forms.

Black tea syrup: Bring 200 ml water to the boil, take the pan off the heat and let 2 Earl Grey tea bags steep in the covered pan for about 4 minutes. Add 300 g sugar and stir over a low heat until dissolved.
