Kertasníkir – Eggnog Punch

Ingredients

• 40 ml Hvítserkur Spiced
• 200 ml eggnog
• Cinnamon stick or star anise

Method

Shake the rum and eggnog very hard with plenty of ice, strain into a glass and garnish with a cinnamon stick or star anise.

Eggnog: Whisk 5 egg yolks and 150 g sugar until light and pale. Bring 400 ml cream and 400 ml milk to the boil with a vanilla pod, ½ tsp cinnamon, 10 cardamom pods and 5 star anise. Strain over the eggs and stir, then heat over a medium heat, stirring constantly, until it thickens. Strain and chill.
