Hvítserkur White

Pineapple Rum Cocktail

Ingredients

60 ml Hvítserkur White
45 ml pineapple juice
7.5 ml maraschino liqueur
6 mint leaves
1 tsp sugar
2 lime wedges
2 dashes orange bitters
Mint, lime and a tiny pinch of chilli flakes

Method

Muddle the lime wedges with the sugar and gently press in the mint. Add the rum, pineapple juice, maraschino, bitters and ice and shake. Strain over fresh ice into a stemmed glass and garnish.
