Stuðlaberg Gin

Summer Gimlet

Ingredients

50 ml Stuðlaberg Gin
25 ml lime juice
15 ml passion fruit syrup
10 ml rhubarb liqueur
10 ml aquafaba or egg white
Edible flowers to garnish

Method

Shake all the ingredients with ice for 10–15 seconds, strain into another glass and discard the ice. Shake again without ice for 15–20 seconds – this gives a silky foam. Strain into a chilled coupe and garnish with edible flowers.
